After many failed attempts to try Pig on the Street on Food Truck Mondays (namely because it was closed, well, on Mondays), I managed to come here for a quick lunch with my colleagues.
Unlike most of the other food trucks in Vancouver, this one is what some might call a more "legit" food truck. It's in a tiny truck, with only two people cooking inside. They actually have someone stand outside to take orders rather than tower above from inside the truck. It's cute.
Betty had the southern piggy ($10) with double smoked bacon, bourbon BBQ sauce, grilled peppers, roasted corn, farmhouse cheddar, greens, chipotle mayo. She enjoyed it more than her Pig LT that she had last time. Similar to mine, it was inside a hand-crafted whole-wheat blend flatbread -- this flatbread is deceiving! It's actually quite filling.
My piggy blues ($10) was filled with double smoked bacon, grilled mushrooms, creamy mild blue cheese, greens, caramelized onion mayo. The bacon was delicious; it wasn't necessarily the crispy type since it was thicker but it had a nice texture to it.
I enjoyed the melange of flavours from the blue cheese as well as the caramelized onions. The portobello mushroom was also good since it added a contrasting texture. I was also pleased to find the fillings to be evenly spread throughout the sandwich, especially the arugula!
